  • 1/2 cup all-purpose flour

  • 1 teaspoon freshly ground white pepper

  • 1 teaspoon salt

  • 1/2 cup canola oil

  • 2 tablespoons clarified butter, melted

  • Juice of 1 lemon

  • Additional salt to taste

Directions

  1. Pat the fillets dry and place them in a bowl with the milk.

  2. Using a mortar and pestle, crush the fennel seeds and turmeric into a coarse powder. Blend in half of the garlic cloves and the bay leaf, then mix this seasoning blend into the milk. Add a drizzle of oil, stir, and let the fish soak in the marinade for about 5 minutes.

  3. Warm 1/4 cup of canola oil in a skillet over medium-high heat. Lay the fillets in the pan and cook for about 3 minutes on each side. Remove and lightly pat dry. Season with salt and pepper.

  4. In a separate non-stick pan, heat the remaining oil. Sauté the leftover garlic for 2 minutes, being careful not to burn it.

  5. Dust one side of each fillet with flour and place them in the pan, flour side down. Cook until a thin crust forms, then dust the top with flour before flipping.

  6. Fry the fillets for 7–8 minutes per side, or until golden brown. Brush with clarified butter and flip once more to finish.

  7. Just before serving, drizzle with fresh lemon juice and cover for five minutes to let the flavors soak in.
